Green bean casserole recipe

A super mushroomy, freshly made update on the classic green bean casserole

Serves 4

Preparation time 25 minutes

Cooking time 35 minutes

Total duration 1 hour

  • 4 tablespoon butter or olive oil, or a mixture of both
  • 4 cloves garlic crushed
  • 1/2 medium onion slice
  • 1 kg mushrooms cremini preferably pre-sliced
  • 4-8 strands thyme or other herbs
  • 2 tablespoon all-purpose flour
  • 3/4 cup white wine or beef/chicken/vegetable broth
  • 1 cup thick cream
  • 0.5-1 cup milk optional, see notes
  • 1 tablespoon soy sauce with black mushrooms or regular soy sauce
  • 1 teaspoon fish sauce optional
  • 1/2 cup fried onions

Assembly

  • 1.5 kg green beans cut ends
  • 1/2 cup Parmigiano Reggiano cheese or Cheddar
  • 1 cup fried onions or more, to finish
  • Melt the butter over medium heat, taking care not to burn it. Sauté the onions for 2-3 minutes, then add the garlic and cook for about 1 minute. Add the mushrooms and thyme. Cook, stirring occasionally, until mushrooms are golden brown, about 7 minutes. Add the flour, salt and pepper and stir for another 2 minutes until the flour is well incorporated.

  • Add the wine and let reduce by half, about 3 minutes. Reduce the heat to low, then add the cream, soy sauce, fish sauce, milk (if using) and fried onions. Stir, season and simmer for 10 to 15 minutes.

  • While waiting for your sauce to thicken, blanch your green beans in boiling salted water for 3 minutes, then drain them and let them cool. If you like your green beans on the crunchy, squeaky side, use an ice bath. Also preheat your oven to 375°F.

  • To assemble: arrange a bed of green beans in a large baking dish. Pour the mushroom sauce over it and garnish with parmesan. Bake for 30 minutes at 375ºF.

  • Remove from the oven, gently toss the green beans a little, then top with more onions. Return to the oven for another 5 minutes or until the onions are crisp.

Add milk if you prefer your casserole more flavorful, leave it aside if you prefer a thicker casserole. In the photo without added milk.
