Cranberry Brie Bites | Meal Prep Hub Ingredients • 2 sheets frozen puff pastry, thawed • 550 g Brie cheese of your choice • 1 12 oz can whole cranberry sauce or 1 cup hot cranberry sauce • 2 teaspoons sea salt • ½ cup chopped pecans • chopped fresh rosemary Instructions • Preheat oven to 375 degrees F. Grease a mini baking pan 12 or 24 cup muffins with nonstick spray. To start, place the Brie in the freezer to give it time to firm up and make it easier to cut. Use one sheet of puff pastry at a time and leave one in the refrigerator while you work with the other. • Roll out the puff pastry on a lightly floured surface to a size of approximately 10 x 14 inches. Cut into 24 squares with 6 strips lengthwise and 4 strips widthwise. Carefully place each square in each muffin cup. Prick the bottom of each pastry with a fork in an “X” shape. Cut the brie in half and each half into 24 pieces. Place a piece of brie on the bottom, a teaspoon of cranberry sauce, a pinch of sea salt and a sprinkle of pecans on each pastry. • Bake for 18 minutes or until the dough is golden and puffy. Let cool for 5 minutes. Repeat until all the pastries are done, making about 48 bites. Carefully transfer to a serving plate. Serve.
