How to make fried egg rice

  1. Prepare all the ingredients. Because fried rice concerns cooking over high heat, it is useful to have prepared everything and ready to leave. Cut the green onions in a bowl, light the eggs slightly in another and make a simple seasoning in a last bowl (more on this subject below).
  2. Season your rice. See below for my specific seasoning mixture. The bustle of the cold rice seasoning mixture has several advantages.   3. Fry. Heat a little oil in a wok and add the whites and the light green parts of your green onions. Stir briefly then add the slightly beaten eggs. You want to fry your eggs so that they are simply adjusted. When they finished, remove them from the wok.
  4. Crisp. Add a little more oil, light the heat aloud and add all the rice and cook, stirring from time to time until the rice is hot, grilled and crisp. You don’t need to move the rice too much, the goal is to leave it crisp. When it is hot and toasted, add the eggs and mix everything. Stir in the green parts of the green onion and it’s time to eat!

Assisation of fried rice with eggs

I mix a little chicken broth (you can use water if you don’t eat chicken) with oil, garlic energy, ginger powder, salt, white pepper and a little sugar. The use of garlic and ginger powder gives you all the flavor without chopping or tiny bits. I love garlic and ginger powder because it is simply garlic and ginger, dehydrated and scrambled.

The right type of rice

You will hear that good fried rice is made with rice for a day, and it is certainly a way of doing it, but most Chinese restaurants have no time or refrigerator for that. What type of rice should I use for fried rice?

To be honest, you can use any type of rice for fried rice! At home, we mainly use Koshihikari or Pink Kokuho, but growing up, fried rice was a day jasmine rice. Now I totally prefer fried rice made from Japanese rice. The grains are so dodus and soft. If you haven’t tried it, please do it, it’s a whole new world of fried rice, especially if you are looking to make a copycat of fried rice at Din Tai Fung. Din Tai Fung uses Nishiki rice, a Californian medium grain rice that is super similar to pink or calrose kokuho.

Do I need a Wok for Fried Rice?

The answer is yes and no. You don’t do it need A wok, but if you have one, use it. A wok, with its different heat areas, due to its pretty round shape, is ideal for frying and throwing, perfect for fried rice. If you use a wok, you will get wok HEI, this essential smoked essence that you get when you get when you use a Wok over hot heat.
