What is nutritional yeast?
Nutritional yeast is a puff pastry powder which is made from a sort of yeast which is the same as the Baker or Brewer yeast. The cooking and brewing of the yeast are active, which allows you to get up and hide from the bread. Nutritional yeast, on the other hand, is inactive. It is cultivated specifically for food, then harvested.
Once harvested, heat deactivates the yeast, then it is washed, dried and collapsed. The result is a cheesy, hazelnut and salty ingredient that is used to make vegan cheese sauces, vegan dips, soups, fogs, stews, etc.
Fortified vs fortified
Breast is a natural source of protein and vitamins B. There are two types of nutritional yeast, fortified and fortified.
- Fortified To added vitamins to increase nutritional content. Most of those you find commercially are enriched with B12 and folic acid.
- Unfortified Has not added vitamins or minerals. Uncnaked yeast itself has proteins and vitamins B.
Flocons, granules or powder
Depending on what you want to use your yeast, it is available in flakes, granules or powder. I like large flakes for sprinkling and granules or powder for sauces. You can also use your food processor to transform the powder flakes.
Is nutritional yeast good for you?
Nutritional yeast is, as its name, very nutritious, proclaims. It is an excellent source of protein, B vitamins and minerals. It has nine essential amino acids and is a great way to add high quality proteins to your diet. The enriched yeast is large because it has B12 which helps maintain a healthy nervous system, energy and the creation of red blood cells. It also has antioxidants that help protect your cells.
How to benefit
Think about it as a vegan grated cheese. Wherever you want a cheese, add a pinch!

Where to buy nutritional yeast
They sell it in natural food stores and in the health aisle in most grocery stores. You can also buy it online. I like the big Flocon of Bob’s Red Mill but there are tons of brands.
- 1/4 cup olive oil favorite extra virgin
- 1 tablespoon nutritional yeast Large favorite flake
- 1 tablespoon lemon juice about 1 medium lemon
- 1 clove garlic crushed
- 1/4 teaspoon salt
- 1/4 teaspoon Freshly ground pepper
- lemon zest lemon before the juice
- 1 bunch kale favorite lacinato kale, about 4 finely chopped cups
Serves 2 as a principal or 4 as a side salad.
