The Ultimate Umami Bomb Tomato Sauce · i am a food blog
When you are looking for tomato and comforting and comforting pasta, this Umami’s ultimate tomato sauce will hit all the right notes.
Can you believe that November is almost finished? There is only one week of the month left and it will be in December. Where did 2019 go?! Is this what they want to say when they say time goes by faster and faster than you get older? The wait until December seemed so infinite as a child, now I am already like holiday music? But, let’s be honest here, I exploded “everything I want for Christmas is you” in rehearsal last month. I’m still not fed up.
How is your Thanksgiving planning? We calm down here (maybe not at all) because we do a little kitchen renovation-nothing crazy, just having additional shelves because Ikea had this cooking event and Mike was like, we are dealing with certain shelves. Ikea is cheap and everything, but guy, these shelves add up … It is our little Christmas present to ourselves (mainly me, however). The kitchen has been out of order for a while now, but soon we will get it back!
Before tearing our hood, I made a quick tomato sauce and easy to eat with pasta, because noodles. I have already said it and I will say it forever, noodles are my last comforting food. I love love noodles, and especially pasta, when I put it in a bowl. There is something comforting to eat pasta in a bowl that I can hold in my hands. This is because it reminds me of being a child and having snacks after school on the sofa, rocking and placing bowls of noodles.
It is probably the fastest and most amplified tomato sauce that you can make in less than 30 minutes. He uses all the ingredients of the pantry and that is almost the best. Mike and I like to pivot our pasta sauces with soy for a little more punch and Umami. This really increases the Umami, especially when you make a tomato sauce as I did here. It really highlights the tomato flavor and adds a beautiful underlying layer of tasty.
This sauce is as simple as simple can be: start by melting a generous quantity of butter and slowly cook the crushed garlic. The low fire infuses the butter with all the goodness to the garlic and softens everything. To this, you add the small box of tomatoes you have in your pantry. I used canned cherry tomatoes, but you can use crushed or whole, everything that works. Stir in a little soy and simmer everything. The butter will emerge in the sauce, the tomatoes will break and cook (use a wooden spoon to break slowly if you need it) and everything will turn into the most comfortable sauce. Taste, adjust the seasoning and you are ready to go.
From there, you just have to cook your favorite pasta shape – this case, I went with the infinitely cute and curly caliber, which is perfect for catching the sauce. I like to cook the pasta 1-2 shines of al dente, then finish cooking in the sauce. It helps the sauce to infuse the pasta even more, which means an additional flavor. Finish everything with a generous cheese sprinkler and, if you have it, Furikake! It looks like a fun thing to garnish your pasta, but Furikake is mainly salty Japanese crunchy that taste everything.
Seriously comforting, really easy.
Good noodles!
XOXO Steph
