I air fried ALL the things. I’m in love with that crispy, crunchy texture the air fryer gives to vegetables. It’s funny because I thought our main use of the air fryer would be for frozen fries, but more often than not we’ve been air frying vegetables. It was all vegetables, all the time. Okay, and chicken, because I’m obsessed with air fried chicken.

Anyway, after the Broccoli success in the air fryerI knew the next vegetable I had to make was Brussels sprouts. I love the taste of Brussels sprouts when roasted and wanted to do a comparison with air fryers. The result: crisp, browned leaves with tender shoots. They’re not as soft when you air fry them, unless you add extra time, but I really like veggies with a little bite, so that doesn’t bother me at all. I especially loved being able to have a vegan keto roasted Brussels sprouts snack so quickly.

How to Make the Crispiest Brussels Sprouts: Air Fryer Edition

  1. Cut and halve the shoots. Cutting the sprouts in half means the insides will become tender in a short time. This will also give your sprouts more surface area and crisper.
  2. Mix with oil. Toss with a little oil so that the sprouts take on a nice golden color and are evenly crispy. Season with salt and pepper.
  3. Fry in water. Air fry, stopping occasionally to shake the air fryer basket.
  4. Dress. While the sprouts are cooking, make a quick vinaigrette. When the sprouts are cooked, add the vinaigrette and enjoy immediately!

Pro tip: I love adding aromatics when cooking in the air fryer because it makes the sprouts more delicious and you can eat them afterwards. Air fried shallots (or onions or garlic) are DELICIOUS.

What sauces can I season my Brussels sprouts with?

I kept it simple and just enjoyed the sprouts as is, but you can make a sauce to dress the sprouts. Dress them while they’re hot!

  • Garlic butter: mince 2 cloves of garlic and heat with 1 to 2 tablespoons of butter over low heat.
  • Creamy Dijon: whisk together 1 tablespoon olive oil with 1 to 22 teaspoons Dijon and 1 to 2 teaspoons apple cider vinegar.
  • Lemon-dill butter: melt 1 to 2 tablespoons of butter over low heat and mix 1 clove of minced garlic with 1 tablespoon of freshly chopped dill and the zest of 1 lemon
  • Balsamic butter: melt 1 to 2 tablespoons of butter and whisk with 1 to 2 teaspoons of balsamic vinegar
  • Honey mustard: whisk together 1 clove minced garlic with 1 tablespoon honey and 1/2 tablespoon each whole grain mustard and olive oil

If you are wondering which fryer we have, it is this one. I don’t know if it’s the best on the market because it’s the only one we’ve used, but it works great. It’s quiet and easy to clean and really big (which is good because you can fit a lot of food in it and bad because it takes up a lot of space in our house).
